Shrimp Dip Appetizer 

1 lb of cooked  Medium size shrimp
1 8oz softened crem cheese
mayonnaise - enough to blend and make creamy
1-2 green onions and tops chopped
juice of 1/2 lemon
Worstershire Sauce to taste
cajun seasoning to taste
cayenne pepper to taste

Cut shrimp into pieces and cream all ingredients together.  The trick to this recipe is the after kick on the cayenne pepper.  Make a day ahead or early in the am for the seasonings to come together.  Serve on plain crackers.

You can substitute smoked trout, smoked salmon or plain salmon as well.

Natalie's Summer Salad

Leafy Red Lettuce, Spring Mix, Romaine, Bibb, Spincah or a blend of all.

Emeralds Glazed Pecans  (this is the trick)
Sliced Avacado
Dried Cranberries
Drained Mandarin Oranges
Fresh Garden Tomatoes

Garlic Powder
Lawry's Season salt
Extra Virgin Olive Oil
White Balsmic Vinegar

(2) parts oil to (1) part vinegar  
Just shake the seasonings in to taste
Flat Iron Steak
Southwest Rub (my good friend Danny's recipe)

2TBS chili Powder
2TBS packed brown sugar
1 TBS Ground Cumin
2 tsp garlic powder
2 tsp cider vinegar
2 tsp Worstershire Sauce
1/4 tsp cayenne pepper
2 tsp cider vinegar

Combine all ingredients in a small bowl and blend until the consistency is like a paste.  If the rub is too dry, add another splash of cider vinegar.  Marinate flat iron steak overnight in a plastic bag.   

Cook the flat iron steak on the grill until medium/medium rare.  The meat is ever so tender and your guests will love it.

HINT:  I like to triple the dry ingredients, blend them togther and put them in a spice jar in my cabinet.  Then when I want to use it I just add the liquid and it's ready to go in a rush.
